I have loads of photo albums on my iPhone (not in the camera roll), but I currently don't have access to the computer the photos were synced from. How do I transfer these photos back to a mac?

Connect it to the Mac and open a program in Applications called Image Capture. Image Capture should get all of the photos off of the phone no matter where they've ended up, even from an album that you synced from iTunes. That's what I use over anything else, even iPhoto, and it was already installed on my macbook so hopefully this computer you're using has it too.
(If you connect your phone and the Mac automatically calls up iPhoto, close it and open Image Capture instead. Cause getting the photos out of iPhoto once you've imported them is a PIA.)

Here is an easy way I've used. That is to use this iPhone to Mac Transfer program http://www.gutensoft.com/Utilities/3herosoft-copy-songs-from-iphone-to-mac.html

It is an easy-to-use iPhone to Computer transfer software that can fast copy songs from iphone to mac and manage your music, videos, photos, podcasts and TV Shows between iPhone and Mac.
And you can use it to transfer all music and other files from your iPhone onto the iTunes in a direct way. This won't overwrite any original files on your iPhone. And all song names are preserved.

Give it a try. It will save you lots of time on this.
