Why do iphone updates take a long time?

It doesn't take that long. It maybe because you're internet connection is really slow and it's still purchase.

To check your internet connection speed, go to http://www.speedtest.net . A speed of at least 768Kbps is pretty decent. Otherwise that maybe the reason it's taking too long.

The update process takes only 10-15 minutes.

Don't disconnect it though unless it's not updating yet (you can tell it's updating when your iPhone shows a progress bar). If it's still on the home screen it's not updating so just disconnect it.
