Music, though iTunes
Movies, slide from right to left and click delete
Apps, click and hold then click little "x" that apears, then delete

Apps hold finger on any app and when they start wiggling tap the x in the top right corner of the app you want to delete
Video slide finger across the title of a video you want to delete and then hit the red button and then hit delete
Music sync the ipod into the computer, look at your music library and delete the songs you don't want by right clicking hit and hitting delete

If by items you mean apps, then you have to press and hold any one of the apps until all of the apps start shaking and an "x" appears on each one. Just press the "x" to delete the app. If you're referring to something else, you may want to check the settings.

Easy!! At the home screen once u slide ur iPod to turn it on hold ur thumb down for a whole second, then all the apps will start shaking and there'll be an x next to them. Cluck it. Then hit yes ur sure 2 delete. Have fun :)

Plug it to your computer, and uncheck what you want off, then press sync.
