Hi mackenziee,
Deleting a file or folder from Mac hard drive removes the Resource Fork which is responsible for stored file manipulation and marks the particular hard drive sector as available but the Data Fork which holds the actual information which user kept in the stored file still remains until it is overwritten with new data. Mac data recovery software scans the drive and retrieves such data.
So download some good recovery software and recover your folders.
